Since moving in with E over a year ago, the hardest part of our week to week living has been coming up with creative items for our dinners. We work opposite schedules, so on the weekends we generally cook a lot of food so that we have plenty of leftovers to see us through.
I have been searching high and low for some inspiration this week and I think I just stumbled on to a genius (and oh so simple) recipe:
INGREDIENTS:2-4 Steaks (whatever cut of meat you like is fine.
3T. Fresh Squeezed Lime Juice
3T. Water1T. Fresh Cilantro Leaves, chopped
1 Small Jalapeno Pepper, chopped and seeded
2 Garlic Cloves, pressed
1/4t. Ground Cumin
Directions:Combine lime juice, cilantro, water, jalapeno pepper, garlic and cumin and pour into a large zip-top plastic bag.
Add steaks, seal and shake bag to coat meat.
Let marinate in refrigerator 1-2 hours,shaking bag every now and then.
Grill steaks over medium heat until cooked to your liking, turning once.
Serve and enjoy.

New life, New name, New SSC
So I spent the morning getting a massage. Got to love a deep tissue rejuvenation to start the day! Especially when the next stop on my list was the Social Security Administration. Not fun. Ever.
But I did my research ahead of time and showed up with my manila envelope containing my Marriage License, a copy of my marriage license, my birth certificate, old SS card and my driver's license. Plus a waiver to sign over my first born if need be.
Not necessary, as it turns out. I waited for half an hour listening to all sorts of sad tales of children facing jail time who needed a copy of their SSC; a new mother trying to get a card for her baby who was turned down because she had no proof that she was, in fact, the mother; a young dude trying to interview for summer jobs, who didn't realize he had a SSN or a SSC and was here to inquire. Awesome.
So, needless to say, my case was quick and painless. Showed my original Marriage License and turned over my old SSC. That's it. My new card will now read Mrs. Marshall. Weird!

Because I can't Knot forever...
So it's time for me to find a new obsession. Something I can craft and utilize during my suddenly boundless free-time (it's amazing what happens once the wedding is planned)....
I decided I needed to re-evaluate my interests and hobbies and find some creative outlet to amuse myself. Ta da! A blog offers just the right remedy: I still get to talk about our life and all the exciting (and mundane) tidbits taking place, but people can just stop reading if they become bored. Brilliant!
So happy reading and please excuse the first few messy posts and I learn to navigate.
